Stir fry sauce or teriyaki works well. Squeeze moisture out, cube, season with salt and pepper and fry until crispy and set aside. Cook your veggies and add the tofu back when you add the sauce. Don't cook too long or it'll lose the crispness with all that liquid in there.

Oven baked seitan has a dry ands disappointing texture but considering they didn't work the dough a tenth of what should be done it's not surprising.
A steamed and panned seitan can get quite great in terms of texture and the taste is essentially what you put in it. A good blend of fresh spices can get you pretty far.
