the actual answer is that as cow diets change, so does the color of the milk (hence more yellow butter in certain times of the year, when they eat beta carotene rich plants)
as factory farms started to spring up, and diets became more standardized (hay/cheap grain) the color of the milk became more winter diet colored than spring (i.e. white) all year round; factories had to come up with an appealing color to keep americans seeing the butter/milk as yellower, which was associated with richness and flavor, hence the additive mentioned above; Kerrygold butter, for example, used to have the season-dependent variable color but over the years and especially as they pushed into american markets, and started to add beta-carotene rich additives to regain uniformity to the yellow color

Historical fluke. Cheddar produced by cows grazing in spring is a little bit yellow and is higher quality, while cows that are fed hay in winter produce a more white cheddar that isn't as flavorful. People figured out they could scam customers by dying the cheese to look like spring cheddar all the time, and an arms race took off to the point that now almost all cheddar is dyed orange.
This has spilled over to processed cheeses (like powders and slices) as well.
