love these things. not sure what they're called. you always find them in the french bakeries. they've got a layer of mousse usually and it doesn't taste fake or artificial or overly sweet.

Yeah, it's sweetened with a pretty strong coconut taste. If you want a more mild flavor, go with regular coconut milk. Just don't substitute coconut milk for sweetened condensed milk.
Also take care not to confuse cream OF coconut with coconut cream, which is thicker coconut milk.

Traditionally it was made with a different kind of cocoa powder, usually Dutched. The acidity of the powder when they didn't have stabilizers would cause a change in color as it oxidized. A red velvet cake is just a chocolate cake using a non-alkalized cocoa powder and a thick, white frosting of some kind. I think it's kind of funny now that people will pay extra for a "specialty cake" that just has food dye, or beet juice in it. :P

A girl at Shoppers told me why the grocery stores started making cakes with the whipped icing and it had nothing to do with it being slightly healthier for you. The reason they do it is because they can store it longer in the refrigerator or freezer and the icing won't start cracking. Real buttercream icing will lose its texture after like a week.

Sorry for the late reply, here it is.

2 (8 oz) pkg cream cheese, softened well (but not melted)
2/3 cup granulated sugar
1 1/2 tsp all-purpose flour
2 large eggs
1 tsp vanilla extract
1/2 cup sour cream

1 1/4 cups all-purpose flour
1/2 tsp baking soda
1 tsp baking powder
1/4 tsp salt
1 tsp ground cinnamon
1/4 tsp allspice
1/8 tsp ground nutmeg
1/2 cup canola oil
1/4 cup unsweetened applesauce
1/2 cup granulated sugar
1/2 cup packed light-brown sugar
1/2 cup coconut
1/2 cup pecans or walnuts
2 large eggs
1 tsp vanilla extract
1 1/3 cups finely grated carrots

Preheat oven to 350 degrees. Butter a 9-inch springform pan and set aside. In a mixing bowl, whisk together sugar and 1 1/2 tsp flour until well combined. Add cream cheese and using an electric hand mixer set on low speed, blend together cream cheese and granulated sugar mixture until smooth. Mix in eggs one at a time, mixing lightly just until combined after each addition and adding in vanilla with second egg. Blend in sour cream. Forcefully tap bowl against countertop about 30 times to release air bubbles.

In a separate mixing bowl, whisk together dry ingredients for 30 seconds. To a separate large mixing bowl, add canola oil, applesauce, sugars, eggs and vanilla extract and blend mixture using electric hand mixer set on low speed for 1 minute. With mixer running on low speed, slowly add in dry ingredients and mix until well blended. Add carrots and mix until evenly distributed. Tap bowl forcefully against counter, about 3 times, just to release large air pockets.

Pour 1 1/2 cups carrot cake mixture into buttered springform pan and spread into an even layer. Dollop about 1/3 of the cream cheese mixture by the spoonfuls over carrot cake layer (don't spread or swirl). Spoon remaining carrot cake mixture over cream cheese layer, then finish by drizzling by the remaining cheesecake mixture over carrot cake layer, working to cover all of the carrot cake mixture (I found this easiest to do this was by slowly drizzling over with the spoon). Bake in preheated oven 60 - 65 minutes, until center portion only jiggles slightly and tenting with aluminum foil at 35 minutes to prevent excessive browning (tent in a way that the foil doesn't touch cheesecake or it will stick). Remove from oven and allow to cool on a wire rack 1 hour, then cover with foil and chill in refrigerator 6 hours or overnight.

Also, you can omit the coconut if you want, I always add some shredded coconut to carrot cake cause that's how my mom makes it. You can just use 3/4 cup oil instead of adding the 1/4 cup applesauce if you don't have applesauce around.

It can however be definitively said that people only thought up the idea because they want it to be true, not because it was ever shown to be the case. That makes it a lie, whether or not it happens to be what really happens.

It's pretty hard to get them right, though. Most of the time buttercream is used because if you use cream, it has to be eaten pretty much immediately but tastes much better.
