The more you deviate from a recipe, at a certain point a dish is no longer what it was meant to be. Drawing this exact line can be difficult so I am sure some people disagree and think these are proper macrons. But IMO in both technique and result adam deviated enough from what macrons are to call these things macrons. But my biggest problem is his laziness. He thinks its better the more a recipe is dumbed down. This is only true to an extent (if true at all), and by now he is just making an ass of himself

i think i agree with you. i honestly feel like in this case his attitude matters. if a home cook had tried his best at macaroons and came out with an ugly result, calling it "failed/ugly macaroons" would have been justified

I agree with the former. A recipe is a recipe in so far that you follow every step of the way. Ragusea's methods are worth notice, however. His videos, at least to me, seem based around the idea of cooking for your children and on a strict time schedule. Anyone who has children, or takes care of them knows that they're impatient little fucks and you're not going to always have time to do it "the right way". Not to mention his simplified versions are often a great start to get your kids or untrained spouse into cooking.
