Sous-vided a steak. Used an IR thermometer to wait until it said the pan was 300° on the edge, at least. Did a 90-second sear, but the damn thing smoked so much that the smoke invaded the rest of the house even though I had a big-ass fan pointing into the kitchen and all the kitchen windows were open.

Got all kinds of baked-on splatter on the pan, too. Had to scrub that fucker with Barkeeper’s Friend for half an hour.

Gonna have to dig out my thermometer’s manual, but I have no idea how to calibrate it for “shiny metal pan”.
