I use 10% vinegar, dawn _very_ rarely and get it off fast and because my cutting board is birdseye maple and honduras rosewood it doesn't absorb soap taste. If you have an endgrain board soap is terrible. Heavy mineral oil to season it. Light mineral oil is poison.
