that's vegitarian "chicken" balls from a chinese place, fried with sweet n sour sauce and sesame seeds in a crispy potato basket. it was decent. my friend had tofu skin "salmon" with fermented black bean sauce and that was tastier but the tofu was tough. didn't get a pic of that though. i told you not to ask.

The red stuff is red cabbage. It is prime winter food here. We cook it with apples, cinnamon, and star anise for hours. It is sweet and sour and goes perfectly with fatty meat like goose or duck.

Mapo tofu recipe
Ingredients:
soft tofu
green onion
ginger
garlic
ground beef
szechuan peppercorn
dry chinese red peppers
doubanjiang
vegetable broth
corn starch slurry
sugar
white vinegar
soy sauce
mirin (optional)
toasted sesame oil (optional)

Start with ingredient prep. Peel your ginger and garlic and finely mince it. Slice up the green onions, reserving some of the green for garnish. Grind your szechuan peppercorns into powder. Put some peppers into a dry pan and lightly toast them till they darken but don't burn, remove them and finely mince. Cut your tofu into cubes.

Start cooking. Add some oil to a pan and add in the ground beef, let it brown a little before adding in the ginger, garlic, and green onion. Chop at the beef with your spatula so it breaks into small bits. Once the vegetables soften add the minced red pepper and the szechuan peppercorn powder, stir and cook until the oil in the pan turns red from the peppers. At this stage add in a good amount of the doubanjian, this is the main flavor component besides the beef, and the main source of color. Stir till it's all incorporated, then add in the vegetable broth and adjust the heat till it's simmering. Allow to cook for a few minutes till it looks more cohesive, then adjust the flavor using the sugar, white vinegar, mirin, sesame oil, and soy sauce (I added little of each). Add a little water or broth if too much liquid has evaporated. At this point the sauce is done, so taste it and make sure you're ok with it - because once you add in the tofu you can't really stir the sauce too much without breaking the tofu apart. Add in the tofu, gently cover the tofu in the sauce, and let simmer for 5 minutes to flavor the tofu. As you're finishing, add some corn starch slurry to thicken the sauce, incorporating very gently (slowly move the spatula from side to side in the pan). Sprinkle the green onion you reserved on top and serve.

Made some reverse seared pork loin with homemade gnocchi and Sunday sauce, pan fried green beans with red pepper flakes and garlic infused oil.
Was my 1st time reverse searing a while pork loin and I gotta say, it's my favorite way to prep it. All pink, juicy. Good sear on the outside. Did it in the oven for an hour at 250 f , turning halfway, then seared it for a minute on each side and let it rest in foil for 10 min before cutting. I regret not making a pan sauce though.
