Glad you noticed the cross contamination issue.
Usually, I don't brown meat with the same type of essential that I would serve it (spatula vs serving spoon if it's ground), but I'm certainly washing my utensils as I work or grabbing a new one. I do this when flipping burgers or steaks on the grill too. I walk my platter and spatula inside the house, wash, grab clean replacements, and go back out.
