Yeah because everyone needs an appliance they will use 20 times then let gather dust on their counter.
They'll be too guilty to throw it away, but eventually they'll get sick of moving it around and dusting it, so i'll go in the cupboard.
Eventually they'll get sick of moving it around to get to the Crockpot, so it will make it's way to the back of the cupboard.
Even then, they get sick of walking down to the basement to get their Bundt Pan so the next time they make their bi-annual Bundt Cake, they take the Instant Pot down with them and set it on the shelf.

Instant Pot is a trend, nothing more. People either loved the original pressure cookers, or their parents put the fear into them blowing up their kitchen and couldn't get over that anxiety to ever use or buy one. And, the original Presto! brand pressure cookers and the like were nearly as pricey as a Le Crueset for their time period. They were heavy solid beasts. So there always was this segment of society that simply didn't own one, til they fell so far out of use outside of ethnic families that swore by them for fast beans.

My cuban friends swear by their microwave pressure cooker devices for perfect rice. I was like eww hot plastic, but the results were delicious.

Then cheap pressure cooker brands fell victim to the Aluminum-causes-alzheimers era.

So, indeed there are 2 distinct generations that are marveling at throwing together food after a commute and getting slow food faster. Being a new thing it spawns cookbooks to give people ideas wtf to do with it.

Both a slow cooker and an instant pot produce subpar results. A Dutch oven is just better. The sear you get at the beginning, the proper reduction of sauces and the caramelisation and depth of flavour is just superior in every way.

instant pot is great for soups and rehydrating dried beans/lentils etc. Beyond that I don't use it too much these days. Even for making stocks I've found it to be meh.

It takes the vegetables past the point of imparting flavor and actually starts to make the stock taste bitter if you let it go too long. I made some turkey stock on the stove after thanksgiving and let it go all day. Vegetables were obviously depleted, but the stock just kept growing in depth. If you put the same ingredients in an instant pot for and hour and a half or so you would get a nasty, brown mess instead of a yellow, flavorful stock.

I don't follow recipes. I follow basic rules of cooking. I don't know the rules of the pressure cooker and just need to know them. I've watched all 8 seasons of A Taste of History with Walter Staib and know the basic rules of cooking with cast iron, baking, and braising traditionally. As long as you follow the basic rules everything tastes amazing. I have had short ribs in an instapot once when my fat sister in law made them but she didn't appear to follow a recipe and just made it in the thing. I guess short ribs braised can't really be fucked up because it's such an amazing ingredient but I would like the thing to just make stews faster.

The only tricky part is knowing how much liquid to include. If it's too dry then it can stick and burn, but you don't want it too wet because it doesn't reduce (pressure regulation is much better than traditional pressure cookers so almost no steam escapes). You probably should follow a recipe for this until you learn the correct feel.

I mean, I have an insta pot. It has its place. I like that it has a timer so I can walk away and forget about it. The cringe is that mommy cooks just throw a bunch of shit in and cook it and BAM a full, "meal" is done.
Use it as a tool only not for a whole meal. Cooks brown rice in about 20 minutes compared to 2 and a half hours. Cooks beans in a half hour. Rehydrated dehydrated products real fast. Helps cook things quick.

Sure, it’s convenient and easy to just be able to leave it, but again, it’s a subpar end result. The sear function simply isn’t powerful enough, and the end result will always be a watery, bland tasting dish.

There are positives to pressure cooking, in that it’s fast, but even as a pressure cooker it’s simply not as good as a traditional stove top version, which can sear on higher and then be reduced over the same higher heat. The end result however will still not be as good as a Dutch oven though.

Again, cooking in a Dutch oven just allows food to develop flavours that you can’t get in a pressure cooker. The caramelised, roasted flavours that an oven imparts, the reduction of sauces, also the fact you have far more control over the cooking process and thus can stop at the perfect doneness. Pressure cookers turn food to mush quite easily.
