How do you make fish not sticking in a regular pan?

>> No.13418565

i only really learned about pans a couple years back so there was a time i was trying to sear steaks in non-stick pans, burning the fuck out of the coating, and using metal shit to scrape away at it.

what's a cheap pan to cook eggs with, preferably with no oil or butter at all

>> No.13418634

Oil and skin side down for 90% of the cooking.

no oil or butter?

you can use a teflon pan, or a ceramic non-stick pan, and both of these you can get cheap ones that are fine. you might be able to cook an egg with no oil/butter on them if you use a low heat...but really you should use a little oil. you don't need a lot, could just put a little oil on a paper towel and wipe the pan with it, or use an oil spray. it will be better with oil.

if you really want to cook eggs with no oil though, why fry? frying means to cook over direct heat with fat/oil. poaching is delicious and uses no oil.

Just want to limit my calories but yea I can use a little oil I guess like half a tablespoon. Which kind would be best for that?
Poaching is a bit more complicated and I like to make a lot of eggs like 7 at once.

i use regular olive oil. for eggs the temperature won't be high so it will be well below its smoking point, and olive oil is a natural product that has a nice aroma and flavour.

you can buy things to make poaching easier btw like a thing you place into a pan. or little silicone cups that float in the water of a saucepan. it could accommodate a lot of eggs. don't write it off completely. i think poached are much tastier personally.

Poaching really isn't hard at all. Just get your water to the right temperature and then you can do the vortex method and poach them without any tools other than a spoon. You could also do some meme method like putting the egg in a plastic bag or whatever if you wanted.

i've done the meme method.

get a cup, put clingfilm over the cup, crack an egg in, tie it up, drop in water.

it was a lot of hassle desu

but i've found just cracking an egg in the water with a vortex has varied success for me, especially when doing multiple eggs.

"Take care" of a pan:
Douse it in oil
Clean it with paper towel after use, and hot water.
Never actually let it become properly de greased afterwards
Only use soap if you can't remove the smells.

How to ruin ANY pan:
Do hardcore washing with washing liquid after every use, making it too dry
Then at some point burn anything to it, peeling off the coating as you remove it

Pans that aren't teflon usually need lots of oil to prevent sticking. It may depends on what you cook in a really well used/seasoned cast iron, but generally you still need to lay a nice layer of oil down when you cook things in pans. This was normal and not avoided before the low-fat fad/scare and makes things taste better. If you want to avoid cooking with oil then you either need to use other methods of cooking or use teflon that you replace more often than anyone likes to replace all their pots and pans, because its non-stick properties get ruined with heavy use as well as become dangerous to your health. I find that my tri-ply cuisinart pans cook everything well except for making thin omelets and crepes. You can use carbon steel for that, but someone put my carbon steel pan through the dishwasher and it hasn't been the same since.

Yeah I wouldn't try to do more than maybe two at once with the vortex method. It would probably work fine if you did them one at a time though.
