As for health benefits you need to keep in mind that the kashroot laws were written in and for desert climate and food
You dont eat pork because its hard to kill all the bacteria with heat due to its fat
You dont mix milk and meat because it kills your kidneys
You dont eat sea creatures without scalez because they are not protected from contaminated water

Not eating pig meat is probably an accidental health benefit since that tends to be the meat that's cured most often and cured meats are the absolute worst for you.
Normally prepared red meat just has some maybe carcinogenic if you eat lots of it over a long period of time and have other risk factors kind of thing going for it while cured meats are a lot more likely to straight up ratchet your cancer risk significantly higher. And there's evidence beyond the statistical for cured meats being bad in that way, like the way asia countries have that higher than normal gastric cancer rate and also consume much higher than normal sodium levels (and cured = use lots of salt to preserve it).
There are also some infectious disease / parasite risks more associated with pig meat than other kinds of animals. That said I'm a hypocrite and love all sorts of pork products, so do what you want.

No health problems are ever impacting 100% of consumers. Also the places where raw meat is commonly served are usually going to take better care of their animals. If you're talking about pigs in the quantity needed to supply the entire US on the other hand that is not going to be some loving, caring environment for the pigs and there will be a nontrivial amount of sick assembly line pigs getting in there that you need to take extra measures to not get sick from. So eating mett in Germany is probably going to be a safer bet than eating raw pork in the US.

Source? I have never heard of milk and meat causing kidney problems together before. Also it's still kosher to eat both in your diet, you just don't eat them as part of the same item or use milk to wash down the meat you ate, which shouldn't really have any difference to your health and always sounded entirely like a moral thing alone to me (that it's just kind of disrespectful to take the meat of an animal and wash it down with the same sort of milk its own mother would nurse it with).
