The entree was the result of market pressure from all sectors. Low-quality chains like iHop and Denny's, chip companies like Lay's, etc. To this day, no one would even think about chicken and waffles if it wasnt for corporations shoving it in your face everywhere.

It's not Southern, at all.
It's Harlem food, and by way of Harlem, Los Angeles/Hollywood food. It could be called soul food. They were never served on the same plate. It was a late night, post dinner shhow or theatre show kind of thing to go to a diner and gab and hang out with friends over coffee. Dinner is still served. Breakfast is already being served. It's the middle of the night. Therefore, you order the two best items on the menu. Waffles (waffle irons were a novelty at the time and popular). Fried chicken was freshly made and also delicious. They came on separate plates.

If you don't like them together, then don't order it. Some place like dennys, or ihop is going to be making ubersweet disgusting waffles using pancake batter with a ton of artificial butter and artificial vanilla flavors, and they aren't fried chicken restaurants.

Roscoe's in Hollywood is where I first had them ~2010. About 4am. They're never served in a plate like that. I literally ordered the chicken and waffles and had some the most amazing fried chicken and waffles I've ever had. They weren't trying to be more than they were. Just fried chicken. And waffles. I also ordered a side of mac and cheese and fried okra. Shit was awesome at 4am on a night in Hollywood, CA.
