Mate, there are literally 5 diners within a 15 minute driving distance which meet that standard.
The thing is they have a small menu, and are either 24 hour or breakfast only, and most have a simple menu of grilled/fried goods, decent coffee, and shakes.
Most people just don't want more than that, and they want it cheap.

Two of the other three are like this but with less offerings and a few different dishes. One is only open until 2PM most days, closing early often, but has a few more sandwiches, soups, and other niceties.
The regular crowd for each diner is less about the food, and more the location + crowd + time of day.

I was in the US in the early 90s and ate at one of these somewhere outside of New York.
I remember liking it quite a lot.
When I came back to the States in the late 90s then permanently since 2008, they were nowhere to be found. : (
During that same early 90s residency, my family also ate at Howard Johnson's (which was also delicious, btw) and they're gone now, too. And people tell me I'm misremembering it, but I swear to Christ that there used to be a Jimmy Dean chain of restaurants which are now gone.
Why do actually good American places, where they actually fucking cook shit rather than heat shit up, go away but shitty places like Applebee's, where the opposite is true, stay in business forever?
