As a counter, how about things you keep trying but can't get into? For me it's anything with vinegar. At this point I'm convinced it's a more than a taste aversion because I cant handle storebought condiments or pickles but i will happily eat lemon based mayonnaise and early ferment pickles like kimchee and real sauerkraut

I started eating them at an early age because I read they help prevent prostate cancer. It's not that I didn't like their flavor, although I do now, but as a child, the slimy seeds were off-putting.

I couldn't stand the texture or taste of mushrooms as a kid, but the only exposure I had to them was button mushrooms in crappy chinese food. A lot of foods I didn't like had a lot to do with bad cooking like lima beans, brussels sprouts, and fish (also partly that kids often have an aversion to fish but it helps if cooked correctly). I also hated oregano and Italian food in general, which I also has to do with bad American versions of Italian food and being sensitive to certain flavors. When I was 15 I studied abroad in France and ate everything I was ever served out of respect even if I didn't like it after trying it. By eating things I initially didn't like repeatedly, I was able to open myself up to enjoying flavors and textures that I never would have wanted to eat. I enjoy practically everything now as long as it's freshly made with good ingredients and the meal itself is balanced. I don't like eating southern food, because they don't balance things out. It's just heavy on heavy on heavy and fried in large portions and lacking crisp freshness. I'd be okay with a small (legit small not American "small") portion of chicken fried steak if it were served with a nice northern non-mayo based slaw or nice salad that's not made with crappy tasteless generic lettuce. Rich and heavy things are great but not in overwhelming portions with nothing to break it up.
