What should I know before start eating raw fish like sushi and ceviche?

>> No.13301446

you should know that poaching often endangered wild species from the ocean is morally dubious at best

>> No.13301468

Are you preparing it yourself or just ordering out?
At a restaurant, you should know that raw fish is less likely to make you sick than a lot of cooked meats because they have to get it in fresh from the water.

I'm preparing myself. Never tried this, tho.

You basically want it fresh, has been frozen at least once to kill parasites (some countries flash freeze them before distribution others don't) and eaten as soon as possible after being filleted.

Why are you pulling made up shit out of your ass and posting it like it's an established fact?

That's it's not actually raw unless your in Japan or made it yourself
Most civilized countries will require it to be frozen to kill bacteria

How do I know if its fresh when frozen? I live in coastal area in South America so I have both options.

If you are making it yourself, make sure the fish has been frozen before you serve. Otherwise you might get parasites and other nasty shit

Parasite hazard, sushi fish must be frozen to kill the larvae. If you eat any flesh meat raw, chances are that you will get a parasite.

Fresh shellfish can contain high quantities of lead, just avoid those and you should be fine.
I've lived in a seaside town all my life eating fish every other day for over a decade and I never had any serious health issue.

is the term "sushi grade" even a real term when you buy fish at a store?

>> No.13303204

it means it's been frozen at -20 something degrees celsius for over a day to kill off parasites, i think

You do realize that sushi chefs train for years before making it right? Also, the most important thing about good tasting sushi is how fresh it is. Fresh fish has no fishy smell or taste.

Ceviche would be easier, more margin for error.
