so what's at play here seems to be that carrots grow in the same way trees do, and the freezing process has damaged and softened the fibres in the same way it occurs with meat.
loosening of the bonds results in a spongier texture, the dense core is mostly still intact while the outer middle layer is vertically split
in contrast, the outer most layers before the skin acts similar to a cambium layer, with the skin and cambium acting like a tube, the contents are held inside and kept flexible.
if I split these I should do them like traditional singles in a circle for structural integrity, doing in layers would result in mush

often it's located either in the door or under a burner.

looking at your set up there doesn't seem very conducive to getting coals unless you use a torch or something/extreme heat. I don't have experience smoking though, only have experience building fires outside. What I would do is do a fire outside of the oven (and preferably outside of the house near a water source just in case) and build it up until you have the point of getting coals, then transfer the coals to your receptacle in the oven and put the spices over it. it tasted pretty good but the side that was on the bottom of the oven was a little hot

this shows some of the disassembly, but under neath the forbidden cotton candy there is heat shield which needs to be removed so you can cook on top of the ovens box like a wood stove
the best place to run the smokestack on that model through I think would be where the light fits through but I'm unsure how much oven sits behind that fitting
