I just finished making a tasty NY style cheesecake for dessert after the thanksgiving feast tomorrow. Pic absolutely related. It just finished cooling in its waterbath in the oven, and it separated from the sides of the spring form pan perfectly, no cracking at all! I'm very pleased with the outcome and I'm excited to serve it tomorrow.

I've played around with it for a few years. Turkey is a strong enough flavor that it needs some heavier flavors to compliment it. I tried juniper berries, which tend to be too strong or just adding a strange subtle note. They work better with duck or deer. I tried going heavier on the standard aromatics, but it just made it taste like reduced turkey soup instead of gravy. Not bad, just not what most people want to smother their mashed potatoes with. It turns out to make a really nice consomme, though. I tried some other flavors, like chili peppers, tarragon, citrus zest, mushrooms (this one works too, but the mushrooms in the store looked like shit this year), but even if they turned out good, they usually were just too different from a standard gravy.

The way I grew up (CA, parent with Louisiana culinary background), we'd have gravy made from homemade turkey stock + a dark roux + pan drippings, no giblets in. I did not even know of the existence of giblets in gravy until recently.

Stuffing was good, but I decided to not add egg to it as a binder this time. It woulda been fine had I kept it as a dressing, but since I stuffed it into into cabbage leaves, it was a bit mushy.
Collards were a tad too sweet as I'd added just a slight bit too much onion. Still good, though, especially since it. balanced out the slight bitterness of the rutabaga mash.
Gravy was the best I'd ever made, honestly. No idea what I did differently this time. I did it as I always do, but it was really fucking good this time.
The braised carrots and the cranberry sauce were as good as they always are.
The tit, though. Srsly. The best fucking turkey tit I've ever had.
Kinda glad I didn't go have TG with family.
All in all, 8/10. Woulda been 9/10 had the stuffing had egg in it and 10/10 had my brother not made TG impossible to have with him.
