What's /ck/ doing for the holidays? Cooking, being cooked for, or avoiding the debacle entirely?

I'm in charge of the the kitchen this year for my extended family gathering of 20 or so people. My planned menu consists of:

>Turkey
>Stuffing
>Green beans (style tbd, fuck doing that nasty casserole)
>Mashed potatoes
>Sweet potatoes (roasted or mashed, still undecided)
>Butternut Squash risotto
>Turkey gravy
>Cranberry Sauce
>Salad with mixed greens, apple, pecan, dried cranberries and blue cheese
>Selection of rolls
>Assorted pies and ice cream for dessert

What does /ck/ think of this spread? Anything missing?

This is a Sweet Potato Pie Recipe from the White House Cook Book, circa 1913. It is really easy and actually tastes like sweet potato, not pumpkin pie.

One pound of steamed sweet potatoes finely mashed, two cups sugar, one cup cream, one-half cup butter, three well-beaten eggs, flavor with lemon or nutmeg and bake in pastry shell.

I bake at 350 degrees until center of the filling is set. About an hour.

You might want to reduce the sugar down to 1-1/4 cups because even at 1-1/2 cups it's really sweet.

You can microwave or bake the (whole) sweet potato instead of steaming. If you bake them the filling will come out darker because of the carmelization of the sweet potato sugars. I use a hand mixer to blend up the sweet potato because it helps to remove some of the string like fibers from the mashed pulp. A potato ricer also works for removing some of the fibers.

Could use some advice here. I planned a menu well in advance that I would cook for everyone. I just found out that some well-meaning relatives were unaware of this, and have ordered two "thanksgiving meal kits" from our regional grocery store. They're basically a turkey and some pre-made sides that just need to be reheated in the oven.

I appreciate the gesture and don't want to be rude, but how the fuck to I square that with my desire to not eat a giant TV dinner for thanksgiving.

I was told that I would be in charge of getting a bird and getting a desert for Thanksgiving.
My plan is to acquire a Whole Turkey and ingredients to make French Beignets three days before thanksgiving. Originally I wanted to get a duck because I've never had duck, but my mom says its too expensive, even though this is coming out of my wallet.
Any advice, reccs, etc? When should I get my stuff? I also work at a restaurant the morning of thanksgiving and it will be busy and I'll be exhausted afterwards.

A duck isn't a ton of food for a group to share, and can be even trickier to cook correctly than a turkey, so you're mom's probably got the right idea on that. Definitely get the turkey at least 4 days in advance. Because it takes that long to thaw in the fridge.

The dessert choice seems a little odd to me, because it seems like extra work for a dessert whereas your folks would probably just prefer some store-bought pumpkin pie over 3-day old bread pastry. If you like to express yourself through beignets, that's fine, i'm just saying what everyone would probably be thinking.

this is something that seems unique to my family but we've always made brussels sprout stuffing.

>add shitload of butter to pot
>add onion, celery, garlic, and hearty herbs

My family has always done a "french canadian meat stuffing", but I have no idea where it came from. It's

And you make sure the meat is really finely ground. When you chill it after the meal and open it up the next day it smells like cat food. But not matter how many friends have thought it looked and smelled gross cold, they devour it when it's cooked. You have to get the right brand of poultry seasoning. I love it, but it's not like anything I've seen from anyone else.

Regular stuffing would make me gag growing up being spoiled with delicious ground meat "stuffing". It's clearly not a stuffing at all, but everyone loves it and my family loved my version I made similar to my grandmother's but that I also adjusted to taste. It's awesome with mashed potatoes. I like regular, traditional stuffing now as well, but our family recipe always has a place in my heart. For poultry seasoning I use a blend from spice hunter but not the finely ground one. The ingredient list is in a different order from all the other stuff I've seen in store, so I get it off Amazon.

Ok so gonna feed anywhere between 6 to 10 this year. No one wanted turkey but everyone wants meatloaf. I usually follow the chef john/brown recipe but since it's Thanksgiving I wanna make it a lil more festive. Was thinking adding sage sausage and some more herbs and maybe a turkey gravy on top. Any suggestions?

I'm taking raw oysters to one party since the shop I buy groceries from is coordinating with a local oyster farm for holiday orders.
