I just caught my mother cutting off pieces of parmezan cheese with mold
and then she used the rest in her meal
she told me it's fine because mold can only grow on the surface of hard cheese
is this true or has she been poisoning me all my life?

All aged cheeses are covered in a surface mold that has to be cleaned off before eating it. They use mold to make many good cheeses. Stop being a faggot.

... and was it even mold? A good cheese will form white tyrosine crystals on the surface as it sits that some dumb people think is a white mold.

Surface mold is like the fungus equivalent of a flower.
Most of the structure is beneath the surface in the form of mycelium, which is like roots.

Not true. This is a habit that probably won't harm you at this point in your life, but when you get older and your digestive system grows less rigorous the roots and trace toxins remaining in foods that remain after you cut away the visible bloom of mould will have a much higher chance of being enough to make you sick and potentially even kill you.

Most mold showing on the surface of cheese has been growing inside since the culture was added at the factory. Cutting it off only visually removes it in which case you should just wipe it.

If you can't deal with the fact that cheese is riddled with mold then stop eating it altogether. So many cheeses in the world (that is outside your flyover state) purposefully have it growing and sporing all through the heart or all over the rind. It's part of the flavour.
