Hello /ck/,
i perfected the recipe for my chili-like stew.
why do i call it chili-like stew and not just chili? well, because some piece of shit elitist faggot will complain about the corn if i call it chili, of course.
i'll translate it and then post.
serves a few people for one meal, i guess 5-6 or one angry loner for a few days.
its very, very easy to make and you dont need a lot of eqipment.

>ground beef, 5-600g
>1 can diced tomatoes, 500g
>1 can hacked tomatoes, 400g
>1 can of kidney beans, 800g
>1 can of corn, 300g
>1 can of sieved tomatoes, (about 200g, maybe a little more, use them too keep the moistness when reheating as well)
>3 red/yellow peppers
>3 onions
>3 garlic clives
>bell pepper powder (2 teaspoons, maybe more)
>chilipowder (1 tablespoon, maybe more)
>orgeano (1 tablespoon)
>cocoa (not the sugary stuff, the pure, bitter cocoa powder, 1-2 table spoons to get the coler and consistency right)
>a little sugar, salt and pepper, something spicy (fresh, cut chilis, dried chilis or tabasco sauce)

put the beef in a put and brown it
onions and bell peppers you dice, and roast them in a pan with oil. add a little sugar to the peppers, and roast the onions until they are a little brown, then add it all to the beef.
add all the cans, but remove the liquid first. you dont want the stew to be thin, it should be pasty.
add the spices, the tiny cut chilis and the garlic (with a garlic press), let it cook for as long as you please, i do it usually at least an hour. dont forget the cocoa, as it is extremely important for the color and consistency.

I cant stand chili/stew with a strong tomato flavor. I also hate the taste of chili powder, it's bitter. For chili, I use 2 parts tomato, 1 part beef broth, and 1 part dark lager, and I seed and devein smoky dried chiles like ancho, morita, pasilla, etc and let them simmer in the liquid and rehydrate for at least 4 hours. You can find these chiles in the mexican section of your grocery store or just get them online. They're dirt cheap and way better than chili powder. Then I dump everything into a blender and blend until smooth.


THEN I add the meat, beans, veg, etc and let it simmer.

Another tip, use charred grilled meat, even if it's ground beef. It adds another smoky note to the chili and deepens the color.

if your chili or chili analogue doesn't start with a big glass of slop like this you're objectively doing it wrong. this is 100% peppers and chicken broth, no tomato. if you are lucky enough to live far enough away from mexicans to not be able to find peppers in the store, use 1/4 cup chili powder and 1 cup broth per pound of meat.

Niggs thats pretty close to something my ex gf made and which I perfected. I call it a Taco Stew, its not authentic at all but it is cheap and delicious.

Take 5-6 potatoes, cut em in cubes and put them in a casserole with two cans of tomatoes and water (just use the one/two cans filled with water). Put that to boil, and then fry some ground beef with chopped onions in a pan. Put taco seasoning, crushed garlic and some tomato paste on it when they are about to get done. Put all this stuff into the pot with the tomatoes/potatoes and continue to boil. When the potatoes are soon to be finished, add a can of corn and a can of kidney beans in it. Adjust for salt/spicy.

It is cheap af and is easily adjustable.

I don't fully brown my beef or turkey for chili before adding the spices. I feel if I fully brown, the spice sticks to the outsides of the meat, but never fully integrates into the meat. I have thought about mixing in the spice by hand before browning, but have not tried it yet. the other thing I do is put half the spices with the meat, then the other half with the beans.
