Hello OP. Great work on the rareness here. I still miss some searing. My trick to get good searing while still keeping the centre delicious rare is to keep the meat in the refrigerator until it goes into the pan. It seems you have used a grill pan, like I love to use myself. This have to reach ridiculous heats before you put on the meat. If there is any fat residues in it, these should start to smoke before you put on the meat.

Even lean ground beef is incredibly fatty compared to normal cuts. Was the beef frozen first? I find that sometimes does something with the water content, and it ends up kind of coming out of the meat easier and causing this. Water plus grease = bubbly simmering mess. I pretty much only grill burgers now, pan fried comes out too greasy for me. Gives me the illusion that it's healthier, too.

Burgers are great, just use a griddle or something where the majority of the greasy shit can run off. They still stay juicy enough as long as you don't overhandle them.
