Hey /ck/ I just made a sauce out of sausages, cream, dehydrated tomatoes, merken and pickled jalapeños.

Now that it is done, that motherfucker somehow tastes like cheese??

because cheese is literally just lactic acid, fat, and umami - and you made a sauce heavy on umami and acid? Cut back on the acidity somewhat - i'd replace the pickled jalapeno with regular jalapeno, or instead of dehydrated tomatos make a sauce from a can of crushed + a tablespoon of tomato paste.

Ye now that you all mention it the thing that was supposed to be the cream has somewhat solidified into little gelatinous particles.
