It’s really uneventful food. When I lived in the US, everyone kept going on about Baja Fresh or whatever it’s called so I got a whole lot of it at that food hall in Boston (whatever that’s called). Got back to eat and it’s basically all just a variation of largely unidentifiable slop on some kind of plain or crisped flatbread. Huge amount of fuss over fucking nothing. Think I binned most of it in the end. The one - burrito I think it was - looked like bean shit plopped in rice then covered up with flatbread toilet paper. It was then I realised, of course, that this is why they must be called ‘beaners’, although I myself much prefer the much more colourful ‘wetback’. One of them used to talk to me at the local ‘deli’ where he worked illegally. Nice chap. Gave me a great steak cooking tip once.

yeah you really only have to salt and pepper on a good cut of steak (use worchestire sauce as a secret ingredient just before flipping) and use an oil you like to get a good crust, the thing is, oven finishing is really only for thick cuts of steak not the quality of the cut. you take a 1/4 inch steak you can do it in a cast iron no problem anything bigger you gotta stick it in the oven.

here you want another tip, for really thick cuts put it in the pan when it's a little cold not room temp, also salt it like a half out before you cook it with flaky salt, then blot the hell out of it so the surface is really dry before putting it in the pan. this will allow the steak to absorb the salt all the way into the center of the cut through osmosis, and pepper it just before putting it into the oven not in the pan.

First time I tried it, I was really impressed so I still do any cut like that the Dane way. I like my meat the rarer side of medium rare so I find it much easier to get it that way. I rarely eat thinner steaks - the UK is not very good on steak eating generally and most packaged steaks in our supermarkets are just too thin. By the time you’ve seared, the whole thing is cooked through and tastes like shit.

I’ve never actually made a taco. We have ‘taco kits’ sold in our supermarkets here and I occasionally look at them but they honestly just look crap. The whole thing. Other than that I don’t think I’ve ever eaten one. That takeout that day was I think burritos and enchilada maybe; I can’t honestly remember other than I thought the tacos wouldn’t make the journey back to the flat intact. We also have ‘tex mex’ restaurants here but, again, they just look crap. No shade on Mexicans or their food - I just don’t think they’d be any good and largely because it isn’t Mexicans or even Americans making it. I mean, I wouldn’t eat English food made by, say, some Russian in Moscow for precisely the same reasons.

alright so I'm gonna suggest something that sounds stupid but I think it's really your best bet to see everything properly.

Fly into LAX, get some rest, grab a car and drive up to Sequoia National Park first, this will take you through the deserts and the valleys, the high deserts and through the grapevine, don't do this in the winter or it will be snowed out. This will take you about 4 hours and you will tons of different topography even the the oil fields of Bakersfield (good fossil hunting here if you're interested but it's a super smoggy and hot as balls part of the state).

Stay in Sequoia for a few days (there's bears here) and then head up to Yosemite, this will be another 3 hour drive and stay a few days.

Make your way west across the state to Big Sur this will be 4 hours of driving, stop and get some rest, not much to do in big sur but you can hang out at the beach and bum around and then start making your way down PCH back to Los Angeles, this will take you along the beach, lot's of stops you can make on this trip, and get good food and look at cool shit, weird little towns you can stop at as well like Solvang although it's a detour but it's worth it so see a Dutch town in America.

And yeah that's it, if you wanna keep going you can go down to San Diego and try their Mexican food it is different from Los Angeles and go all the way into Tijuana, NorCal Mexican food is an afront to god don't even fucking bother.
