Bruno Albouze for your autism baking/pastry . Unfortunately he barely ever interacts with his audience so if you ask a question (he lacks info imo) you won't get an answer. Most other channels are shit in this regard too.

i've tried his pizza recipe and it doesn't come out particularly well. using bread flour is not optimal. i went back to using all purpose flour and the crust comes out much nicer.

also he uses a cold sauce on his pizza - i'm not a fan of this either because the garlic's strong compounds don't break down into the sauce as much. so, your sauce tastes like raw garlic and you have garlic burps all day. not fun.

also, if your oven doesn't get that hot (for example if you live in an apartment) then there's no way you'll get that result.

ive found by experimentation, however, that you can put the pizza in the pan, and heat the pan on the stove very slowly... low, medium low, medium... until it reaches close to the desired level of brownness. make sure you watch it so it doesn't burn. don't put any oil in the pan. then when it does, flip it, cook that side for like 30 seconds, remove from heat, flip again, coat top side with oil/sauce/cheese and then put in oven for at least 350 degrees for 30 minutes. it'll get there and work fine.
