After the novelty wears off, you'll probably not use it that much. It's nice when you're serving big pieces of meat, but an oven does the job well enough.

If you eat a lot of meat and have the opportunity to start making food 3 hours before dinner, go for it. When I get home I'll throw some marinated, cheap meat in the vide and eat a couple of hours later, always nice and tender.

Because I want the specific control and end results.

Yes, I know how to cook a steak properly on the stove. But I can get a ribeye with the entire cut infused with salt, pepper, garlic, and fresh rosemary instead of just the surface, which is amazingly delicious. Vegetables can be cooked to an awesome texture that is extremely hard to replicate. And here's the big one: basically no flavor loss to the cooking medium if you know what you're doing.

And "efficient" is questionable. Once the water bath is at temp, it takes very little energy to hold it there, especially if you cover it to prevent evaporation.

Also, sometimes it's just really nice to be able to do 5 minutes of prep and walk away for a few hours, then do a few minutes of finishing work and get amazing results.

Basically, it's about the what kind of toughness and end texture you want. Most steaks, chops, and other lean cuts are best with a relatively short cook, same with poultry. A sous vide circulator is a complex array of heating coils, water impellers, and thermocouples with a computer controller that maintain an extremely precise temperature. By carefully planning the exact temp and immersion time, you can get extremely precise results impossible with any other technique, or at least results that may require far more pinpoint timing.

They aren't the same, nor to they generate similar results. Crock pots are great at what they do, but they don't give you the same results as an SV setup.

if you want to try and sous vide something, you don't need a special device
you're just leaving it in hot water for an extended period of time, this can easily be achieved with a 5 dollar thermometre, some binder clips, and a couple wooden spoons, you can figure out what temperatures your stove top results in for your amount of water manually, it's just self adjusting, that's all the device really does special. Just don't melt the bag to your pot like a dumbass.
after you've done your attempt you can see if it was worth doing or not for the end result
my biggest issue with sous vide wands is that you can only run water through them, it's not like you can experiment or use them to keep soups and sauce at a proper temperature
