For some reason I've been eating chicken breasts all these years when the thighs are so much better.

Thighs use collagen and fat to hide when they're overdone. Breasts turn to shit if you don't take them off the cooking surface when they hit 155. Gen Z are used to all breasts being terrible because we've managed to breed what even the industry is calling "woody chicken."

Grab your meat mallets boys, these things aren't good for much more than fritters.

Just fry ‘em until skin is crisp. Add bacon, garlic and mushrooms, do a white wine reduction then simmer and add cream to finish off. Spoon over lemon rice or pasta. Sublime. Can also do all these steps, but add stock and casserole them for about an hour.
