Two reasons likely:
They were old and nasty when you bought them.
and/or
They weren't stored ideally.

People used to have low humidity, dark and cool places to store long lasting foods like onions, and potatoes. The proverbial "root cellar" and there was usually some cheese, wine and other stuff down there too.

At home, simulate it. Keep your home cold enough. Remove humidity from the air in your home. Don't store next to bananas. Don't store next to apples (gases). Don't store in a plastic bag all together. In other words, keep them dry, cool and out of the sun for chlorophyll development kinds of reasons.

When I get potatoes home, I inspect them, and usually remove 1 to use first, or throw out if it could spoil the whole batch. But, be careful where you buy them. Be flexible to buy the large loose ones intended for steak dinners, versus some dirty bruised and cut nasty ones in a bag. Sometimes the yukons will be cleaner than the russet or the reds, and you go with that. Barring all else, you can store them in the bottom drawer in your fridge a tad longer if your house is summery hot.

I grow my own potatoes and they keep for months. After I dig them up, I wash them off gently with the hose, lay them out to dry, and then put them into paper bags which go onto my produce rack in the basement. So far my wife and I have harvested about 25 pounds in the last couple weeks. There are more plants to dig.

Point is, if your potatoes are fresh they can keep for months. I suspect there are basically two reasons why supermarket potatoes go bad so quickly. First, they have been dug up, washed once, cured in a warehouse for at least a week or two to stabilize them and allow any handling wounds to heal, and then washed again before being shipped. This is already more washing than you should do. Second, the farm to supermarket supply chain is infected with powerful molds and funguses, as well as fruit flies and so on. There is no way to keep your produce from encountering several strains of disease and several kinds of bugs on the way to the local store.

My potatoes are handled by hand, I eat any with wounds, and only the gemlike jewels, the perfect potatoes go into storage. So that’s probably why they keep so long compared to store bought ones.
