The Cantonese place near me has a ten page menu with pics of every dish on it and every single dish is superb
The local mom and pop diner off the country highway a few miles from work on the other hand has a two page menu with pics of all their food and not a single dish is edible

There's a reason for that, and it's called guanxi. Chinese people move here legally, set up a restaurant, get it successful, then sell it to a friend or apprentice that now owes them a favor for getting them started with a successful business, and take the money to another part of town to set up a new business. That's why nearly all Chinese restaurants have the same menu, but wildly varying quality.

The menus and signage are all produced by just a few companies in the US that everyone uses, because it's a giant fucking daisy chain of Chinese immigrants going back to the first dude to open a Chinese take-out here. There's even a Chinese Restaurant Association newspaper printed in English and Mandarin, so that restaurant owners can know who just bought whose restaurant.

Haven't been to an IHOP for ages, so I can't comment on that, but I've only been disappointed by Waffle House. When I go to a Diner, which is only when I'm on a road trip, I want the standard fair: a plate with hash browns, some meat, eggs, etc.

So, it's Waffle House. And not a single one of their offerings included waffles with eggs+hashbrowns+etc. It would be so easy to just bundle up an eggs+hashbrowns+sausage or bacon+waffle dish, but no. Also, they got my hashbrown order wrong. Fuck them.

If both the picture and the ingredient list correspond somewhat it's much easier to tell them they fucked up not including enough of a certain variant. If it's just text they can put one or two tiny pieces of whatever and claim it's fair.

I think thats probably one of the biggest culture shocks for me when i visited america the lack thereof pictures in menus . it doesnt help with all the flowery language thats used to describe the food. its all so confusing, how do you order something wih absolute certainty of what it is. a chicken sandwich can mean a lot of things.
