Onions and garlic are good. Fruit is too
, but it will be more tart than sweet because the sugar will be eaten up. If you want to keep the sweet put in after fermentation just before blending. Possibly cook it to kill the bacteria so it doesn't eat it up after, but then you don't have the probiotics.

Carrots great, full of sugar if your other ingredients don't have much. It also works great as a thickener if you're not cooking your sauce.

Other things off the top of my head are paprika peppers or bells. Tomatoes too if you're looking that kind of flavour. I can't imagine grocery store tomatoes being that good though since they're kinda bland. Might be better off adding canned tomatoes instead


Some good advice I liked was starting off pretty basic, some garlic and onion with your peppers so you have a base line flavor to work off of
