I've got 3 kids between 4 and 10.

They were all baby led weaned meaning instead of sweet purees their first post milk experiences were brocolli florets, peas, carrot sticks, cauliflower cheese, cucumber and hummus etc

Later we made eating vegetables fun by calling spinach "hulk greens" and the likes. We also cook from scratch every night using a mix of.fresh and frozen ingredients.

All of them now eat and enjoy all vegetables. Sure, they'll eat a hotdog and chips at the fair or whatever but when we are in a restaurant they always choose the vegetable options because they enjoy them.

Can't imagine failing so much as a parent.

Ok, sure, but do you not see what i'm saying? If a kid says they don't like something and you don't make them eat it, later they'll probably give it another chance and like it. But if you make them fight endlessly about it and say over and over again 'i don't like this' because they're stubborn, then they might internalize that arbitrary preference in a lifelong way.
Or if you particuraly traumatise them over food they might have an unhealthy relationship with it in general.
It's definitely not worth getting walked over on discipline, but better yet is not to get yourself into zero sum stubborn games with children where you win or they win.

My parents wouldn't make you clean your plate, because overeating is trashy. But you had to at least eat some of your vegetables - can't just eat the meat/gravy whatever and throw away the rest claiming to be "full." My parents were pretty spot on in this regard. For instance, I ate almost everything, but never liked mushrooms, and they took that as a personal preference and just didn't serve me mushrooms. Meanwhile, my brother would cry and complain if his meat was "too wet" or if anything green touched the plate in any capacity.

The best bet is to not have kids if you're a shithead, but the second best bet is to set firm rules and hold your kids to them, despite the crying or whatever bullshit they pull. Discipline/learning you don't just get to do whatever you want, whenever you want is a priceless mindset to instill in a child. If your kids are stubborn, they learned it from you. Best way to deal with it is to out-stubborn them and teach them how to adapt and "go with the flow" for lack of a better term. If you raise kids that won't eat any vegetables, because they just prefer potatoes and chicken nuggets and you didn't want to go through the bother of "getting into zero sum stubborn games," you just produced a human being destined to live and die unhappy and unhealthy. It would have been more ethical to shoot the child first.

My parents have tried the same method on me and it just didn't work. It just made me sick and upset for being forced to eat food I genuinely couldn't stand and it didn't make me eat it voluntary by any means. The issue is that liking food is not just an issue of taste. If you don't like the smell/look of something and don't want to eat it, then someone forcing you to eat it without you voluntarily doing so won't just change the strong biases and you're more likely to make someone just create a strong negative connotation with said thing, rather than to form them on their own naturally later on.

I've eaten plenty of home-made meals made by my mom, it was pretty much my whole diet as at certain points of my life I didn't even visit the school cafeteria that much, made with vegetables and I like most of them. Honestly vegetables and greeners are some of my favourite food items. Tomatoes, pickles, onion, garlic, peas, carrots, peppers just to list a few. but basically, day programs for a family member
when you're either a family member or a long term volunteer there is a whole other world that most people don't know about

these are kids that are over 18, and will never be adults.
many of them aren't far past the toddler stage, though a few of the more helpful ones could be considered around second grade.
and don't even get me started on what their teen years were like, a 6'4" toddler throwing a tantrum can do more than destroy drywall
with all the repetitive movements they do they're stronger than most gym rats
so when you have to take into account all of their special little needs and problems and who will will cause issues with who over whats whos when they try to attempt this or that because they want this which they have but they dont have and this is theirs but that isnt but their whole damn life outside these programs is based around placating them
it can get a bit complicated

luckily they're still easier to deal with than those LGBT folks since their needs stay the same day to day

Here you have to serve directly in military (army, airforce, navy) or civil service (police, coastguard, firemen) upon the age of 18, but you can delay it if you have studies. If you refuse to serve or if you are a jenovah's witness (refusal to bear arms) you will get sent to army prison for the 2 years.

after 2 years you have to do refresher courses every year for the next 10-15 years (1-4 weeks every year)
if you choose to make it your career, your pay gets bumped up massively and you receive a lump sum of 20k-30k, the state will even sponsor your university(college) fees. On top of that everyone gets free health and dental care while in the service, I had all 4 of my wisdom teeth extracted.

My parents failed to be based like this in stage 2, they weren't nice about it and basically thought they could get me to do it through stress. The rest of the family would join in on it whenever there was a big holiday or something. So even when I did do it, I hated it and never did it on my own later on. Kids are fucking dumb, it doesn't work. It didn't work on me. My mom found the best thing to do was sneak different veggies and fruits into meal. She would give me ice cream if I put berries in it, she would make mashed potatoes with spinach in it and call it grinch potatoes. It's about making it fun and cooking the food right. If you serve a kid boiled shit tier veggies they won't eat them but fry them up and hide them with other foods and you can slowly build that flavor profile.

I was similar to you and even to this day I hate most western versions of veggies. What I did was slowly ease myself in. First find some fruits and veggies you actually can tolerate and if there's zero you like next time you get a burger try getting a plain burger with lettuce and do that for a bit. When you get a pizza try having at least some peppers on it. Just fit in foods you dont normally eat here and there. Once you get comfortable with lettuce, spinach, onion, peppers etc (you dont have to like all of these but keep trying) then you should start trying some Asian food. Start with the easy asian dishes, go for simple stuff like a korean BBQ because it's not to far but it'll have a different flavor profile and you'll be tricking yourself into trying new foods. Then you can start trying some noodle dishes like Pad Thai, this was a dish for me that really helped me enjoy newer ethnic food.

First, rule out allergies and food sensitivities with a doctor. I couldn't eat a lot of italian food because I was sensitive to oregano until my mid-20s. Now I'm sensitive to bell peppers and tomatoes which is much worse imo. But it literally felt scratchy and I hated the texture of tomato sauce.

Buy food. Eat food. Throw up. If it's truly related to the texture you'll get over it. I'm anemic and get dizzy sometimes, and absolutely have fainted in public.
