overrated: any hipster "artisanal" gastropub garbage. It's all the same "foodie" memes circulating around with a 3 year lag-time because the public only heard about this basic ingredient yesterday, all with tryhard "quirky" decor, hoping that you'll pay $30 for a 4 oz steak that was seared au jus in 10 minutes.

underrated: Korean food. I have never had a bad experience with Korean food, the dishes are always balanced, non-greasy, not too spicy, and banchan is usually pretty good. Easily the most consistent and homestyle cuisine experience you can find in the US. They're also usually cheap.

perfectly rated: homestyle Italian food. Everyone likes it, there's something in it for everyone, I can see why it's so popular while also not being something to particularly look forward to.

so the concept is that high quality contemporary cuisine shouldn't be tied to a stuffy atmostphere and you should be able to eat well without being intimidated or not feeling comfy. Whether the food is actually good or the enviroment is actually comfy is another thing but i think it's a good inherent concept. As for it being overpriced, that's just what it costs to do things well, or atleast try to.

iunno sorry. i don't cook a lot of it, or really any of the more delicate stuff, most of what i do is just curries or breads or grilled meats. Paratha is pretty good? try that maybe. It's like spring onion pancakes or puff pastry where you layer the dough and fold fat (ghee) into it. Not really a dish but variations on raita is great and i do that often to have on the side (yogourt with mint, ginger, chillis, garlic and spices in it)

highly recommend you try find a place that does dahi puri though and try it. I don't think it would be easy to do at home, as the shells are fried, but you could give it a go.

Idk man, my girlfriend is korean and has been cooking some bretty good homestyle foods and her parents always have good shit. I'm retarded so I dont know dish names off the top of my head but there's plenty of stuff that aren't based around kimchi or doenjang. You just gotta ignore the popularized stuff that heavily incorporates shit like spam, cheese, and ramen packets.

For examples check out maangchi where she lists main dishes, a lot of them are Instagram tier heavy foods like fried chicken cheese pork belly this n that to draw in the crowd but read between the lines. For asian cuisine it's relatively light but still very flavorful.

Underrated: remember that shithole ethnical joint on the corner? Be it a run-down taco shack or Thai restaurant that serves food only on foam or the Cajun place in a deserted strip mall. Fuck the haute cuisine bullshit that's sold on mainstream media. It's these tiny independent restaurants that have given me a substantial appreciation in food that is uncomplicated and flavorful at the same time.
Perfectly rated: Pho, which has been getting more attention lately. It's a working man's meal with enough robustness from the slow-cooked beef bones, charred onions, spices and fish sauce. It all makes a clear broth bursting with the perfect amount of umami. The sliced meats fill you up sufficiently, but not too heavily, and rice noodles fill in the rest of the dish nicely and provide you with energy for the rest of the day. It's great if you try some of the more unusual meats like tripe and tendon.

Overrated: Meme coffee drinks. Espresso is delicious, I drink a goddamned quart of coffee every day but nitrobrew cold pressed coffee is nothing special. Just leave it on the counter and plunk some ice cubes into it. Same goes for every coffee fancier than a latte. I get how it's a treat, but at what point do you prefer more milk and sugar than coffee? Same goes for dark roast; it's roasted so much to hide the shitty beans they use and has less caffeine. Nothing wrong with high quality coffee, but nothing you get at Starbucks counts.

Underrated: Frog's legs. Holy fucking shit are they delicious. Right before you bite in you have a thought about how it's the leg of the frog, but it's basically the perfect chicken wing. Smooth buttery texture, you get the contrast of the thigh and calf, fucking delicious, even notaste burger nuggets would love them.

Perfectly rated: Shawarma. Everyone likes it, it's hard to fuck up, and the greasier the restaurant, the better. If you don't like pickles you're in for a bad time, but shit is unironically great.
