Memphis BBQ (and BBQ in general) is pretty good, the rest of soul food is just kinda greasy and gross imo.

Originally from MI, now in Memphis

Memphis has good bbq. I prefer carolina whole hog but that's probably because i grew up here. what have you tried? what's greasy to you?

I have an aunt that lives in South Carolina and I got to try a few things there were really great. Probably the best catfish and hush puppies I've ever had in my life, and ditto for some of the cornbread (not the sweet stuff), as well as a few different styles of shit like collards, black eyed peas, etc.

Miss me with those fried green tomatoes, though. I gave it several attempts and just didn't care for them.

I live in Ohio; how far south do I need to travel to get some good southern food?

South of Virginia, so North Carolina longitudinally speaking

It starts to wear off after you start pushing into Florida though, vanishing completely on the pan handle

Slide those onto my plate, bro. I'll trade you a few ribs for 'em. I could eat fried green tomatoes every day for the rest of my life and never be sick of them.

Sauces are different depending on region. They do mustard based there, right?

>> No.12845083

>>12845057
Yeah, SC is a sweet mustard base. NC is vinegar and tomato iirc?

Gumbo, chicken fried steak, venison, dove, cornbread, fried okra, fried green tomatoes, corn, catfish, perch, redfish, sweet potatoes, Mac and cheese, greens, brisket, anything grilled or smoked.. you name it. Most Southern people can make and love all these things. Texas

It depends. There are three main regions for BBQ in SC. Midlands uses a base of vinegar and apple cider vinegar. It's too astringent and ruins the meat if you use too much. Best applied while the meat is still cooking to cut some of that tang. There are s ok me sweeter versions, though. Some even sweeten with grape jelly. Upstate uses a spicy vinegar/tomato base and I also find this unappealing. Lastly is the Peedee region. They use a ketchup/mustard hybrid and this is, imo, the perfect bbq sauce. It's very rich and full of umami. Some even use anchovy.

Will post image of this sauce if I can find one.

There's a Piggly Wiggly in Athens County. I assume they have White Lily or Martha White flour. It is scientifically impossible for southern food to exist in homes north of there.
Realistically you'd have to get pretty close to Virginia or well into Kentucky to consistently find good southern food. The southern third of West Virginia does certain dishes correctly, most notably biscuits.

Shrimp n grits is god's food. I live in tennessee, but I have family in South Carolina. Charleston is a great place to go for great food.

Uhhh southern greens are super greasy, southern fried chicken is disgustingly greasy. Most of the side dishes just seem super buttery and not very flavorful. I forgot about grits until reading through this thread, but those are pretty good when they're done well.

Heres the Peedee blend. Best bbq sauce imo.

Depends. Some parts have sweet mustard, some have a really simple vinegar and black pepper mix, the latter of which is the ~superior~ style to any other.
