where I work we have wraps. if you substitute the chicken for some tofu (which would require learning how to make good tofu) you can make it damn good. Tortilla, ranch, guac, diced tomatoes, black olives, shredded cheddar, and lettuce. muah (no homo)

Those are all tasty and edible, just look up the names to see what kinds of vegetables each one uses, that might help decide which one you want to try.

To that list I’d add
Aloo gobi, basically a spicy potato and cauliflower dish

Rajma, a great dish with red kidney beans

Any dal dish is usually great, basically a lentil soup which can be made with a variety of different lentils

All of them, simply don't put meat in eat.
Great way to experiment with flavors and always funnier than grilling a steak. There's no cheating as well, you can play with recipes and learn new cooking techniques.
