You're supposed to cook the rice separately, brother. No shame in using a rice cooker or a pressure cooker (pressure cooking makes the tastiest rice imo). Cook it, then let it cool in your fridge before attempting to fry it in a wok. Fry everything in the wok with lots of oil before adding your rice. Best results with non sticky rice like basmati.

I never cool my rice when I do fried rice. I just start with bacon and sesame oil then saute my onion, garlic, ginger then I sweat my carrot/sweet potato and peas then add hot cooked rice to the wok then I crack eggs on the sides.

Well, shit. I scrubbed it with a sponge (no soap because the delicate seasoning can't handle it) and now there's a giant unseasoned dry patch in the middle of the pan. Well, so much for the cast iron experiment. Back to nonstick forever. What did I do wrong? I coated it with a thin layer of canola oil and baked it in the oven at 350 degrees Fahrenheit for an hour 4 times. Maybe it's because I didn't use a boatload of oil. I thought it was supposed to be nonstick at this point, so I just used a thin coating to cook the onion.

I don't think 350F is hot enough to really turn the oil into "seasoning". It just kind of gets sticky. In my experience it needs to be closer to around 450F or even higher, but then smoke becomes an issue.

I've tried using a higher temperature, but my house got so smoky that my alarm system automatically called the fire department. I felt so stupid when I had to explain that my house was full of smoke because I was trying to season a cast iron pan. The firefighters had no idea what I was talking about. I immediately threw the skillet in the trash.

I had the same issue. Put the pan in the oven and when I went to check on it after the hour, house was full of smoke. No idea how the alarms weren't going off, which is probably a little disconcerting. Some people will only season cast iron on a grill outside though because it's the only way to really get the right temperature without smoking up your house.

You can even just do temporary seasonings on stainless steel, and it won't create much smoke. Just need to heat the pan over medium-high, and add a little bit of high smoke point oil or fat, then wipe it out. It'll be pretty much nonstick until it gets washed with soap and water.

I used day old rice, but it doesn't matter if your stove is hot enough (like Chinese restaurant jet engine stove). What you need it proper heat control. Add a decent amount of oil and don't add too much rice. There is a reason chink wok dishes are usually for one person at a time. I didn't use a wok for this though, used my cast iron but it worked fine. For your specific problem it seems like you didn't heat your oil high enough and you need to use a spatula to stir constantly.
