quite a lot of rusk/filler in these. I'd say they're maybe 25% raw oats soaked with white wine at least.
Smallish finely chopped onion, a little crushed garlic, salt and pepper, plenty of parsley and basil.
Get one hand wet with water and use a spoon in the other hand to form the meatball in the cup of your palm.
I have the chickenstock in the oven on low just to get it flowing.

Turns out that almost all the juice soaked back in during resting, I barely had enough to put over the pan I served, but it didn't need it.
