use by date is completely meaningless for eggs, if you leave it too long it will just hatch into a chicken and you can cook and eat that instead

They didn't make me ill and they were still delicious.

I have eaten them 3 month+ past the sell by date, float test is fine and even then I have just cracked them to make sure they aren't rotten or smell horrible. Also gives me what I like to call shopping gas. The sulfur is so horrible and choking I like to go crop dust the local market while I shop.

Have personally eaten 3 month old eggs. Apparently they last at room temperature for 6 months, but commercial eggs are washed, which removes some waxy layer that shortens the shelf life considerably
