couldn't see one in the catalog

I got a bar managers job this week and made my own mango rum, coconut rum and coffee liqure today.
I also made my own kafir lime gin

currently drinking white russians with coconut milk

does anyonew know if I can make mango rum shelf stable with lectathin and citric acid?

if I add more than 25% mango pulp it goes bad, and in I can stabilize it I can add sugar so it's ready to pour as shots

the lectathin is just an emulsifier to stop the mango particles settling

I used to work in the raddison as their barman, and have some sick cocktail recipes
