My parents ran a diner which I worked in for most of my teen years. I now graduated uni and have a desk job.

I feel bad for my folks though since they're old now and still work like 80 hours a week while I slack off working from home.

my dad has worked construction for 35-40 years. people who are capable of doing laborious work are just masochists. ever since i worked construction for him, the few jobs ive had after, none compared to the satisfaction i get from being a cook now because when i leave work im soaked head to toe in sweat and even though i have literally nothing to do except play video games when i get home, im relieved and look forward to it and get to take that much needed shower after work and feel accomplished. i didnt get that feeling at my last job doing maintenance or customer service before that. i just felt like a robot

I was garde manger (prep and apps) for a while, then sous-chef with none of the steps in between... stepped over to fast food because it was less hours for more pay, then got out of it almost completely. I do AV tech work these days, filling in with the occasional bit of catering for a few restaurateurs I know. Much better working for myself and mostly cooking for myself.

I love this industry and always have, and always will. I love the magic of watching a dozen servers, assistants, bartenders, etc weaving in and out through a busy dining room like a choreographed dance, watching the cooks work together and listen to their calls while plates show up in the window: I need four fries and six biscuits all day, can I get a dish pickup, hands in the window!

However, I grew up in Illinois. Even the crappy chain restaurants there were run relatively well, tight ship, everything worked. If you didn't show up and turn it out, you got fired.
Now I live in Indiana and every job I've had here, even in upscale places with expensive imported wines - everything sucks. No integrity. No responsibility. No beautiful choreography. I don't know what it is that makes every restaurant in this state a total shit when just 150 miles away you can get better service at an Olive Garden.

I used to work in the kitchen for a famous Italian food chain, and now I work as a coordinator for a state university,

>Do you miss any of it?
I miss the work ethic and sink-or-swim attitude of working in a kitchen, the lack of coddling and emphasis on personal accountability. It's something I think I'll take with me to any job.

Now I manage over 40 employees at my current job, mostly young college students. You can almost always tell who has worked in a kitchen because they do their jobs quick and well and aren't fucking retarded. It's hard to describe, but there's a realness about them.

I worked in food for almost a decade. Started doing summers at state fair slop booths when I was like 15. Then working in restaurants bussing tables, then waiting tables in college.

Got a useless meme degree. Continued waiting tables until I was about 26. Started looking for a way out. Grandparent encouraged me to join the navy.
Did so. Went to OCS, commissioned as an officer. Currently in flight school.

Feels like I escaped the fate of the older waiters I worked with. Beaten down, overworked, poor, shivering alcoholics.
The only things I miss are the people I worked with and the grimy camaraderie / fast money party lifestyle. But that's not sustainable, once you get past mid twenties it ages you very quickly.

Aviation is better.

That's weird, because I worked in four kitchens part time while at uni and accountability was basically non-existent, especially compared to the exacting accountability I've faced after graduating and finding a real job. In most jobs the people in charge want to blame everything on you, which is nothing like what I experienced in kitchens.

Not a kitchen but I worked at a Togo's (basically a better quality Subway) in early college. It was attached to a Baskin Robbins too, as both are under Dunkin Donuts brand.
Learned really basic knife skills, meat slicing, making sandwiches, and making shakes. It wasn't much but it got me into cooking at home more at least. Now that I'm graduated i'm in accounting. I liked my boss cuz he was a pervy asian dude who was funny but couldn't hire decent people to save his life. Some of my coworkers were cool too, but some were downright terrible, like snapping at you for no reason or outright stealing tips because they believed they did a better job. Ended up being the manager before leaving for internships.
