Interesting question. My first thought would be that most pork preparations that focus on pork as the main protein aren't fast, which is why you almost always just see it as bacon. The only example that comes to mind is pork tenderloin sandwiches, but those are a hyper-regional midwest thing.

I mean there is pork in fast food a lot, but for a pork centric fast food place I'd imagine the real reason has to do with two things that fastfood requires: scalability and speed. I'm guessing it's not cheap enough to stock, store, and cook easily with the speed required for most places maybe past hotdogs and bacon (which most places charge extra for, thus the assumption its not cheap to mass produce for fast food). I know chipotle has had issues with their pork and health issues so storing and cooking it quickly is probably tough to do properly without risking being sued. Dunno though, just a guess.

I found an awesome hot dog food truck once. It had a thicker kabanos for meat, delicious whole grain bun, cheddar cheese sauce, red onion confit and crushed pistachios. If they cut the price by half by mass producing I could see it succeeding as a fast food chain cause it was certainly delicious.
