Chinese soy sauce is often thick whereas Japanese is often thin. So good idea to check where the brand is from. I forget which but one is mainly for cooking and the other for dipping hence the consistency difference, something like that.

No mention of Yamasa yet? It's great for normal use but when I can find it at all it's only available in small restaurant sized bottles and it's expensive. The first time I tried it was from a Korean buffet type place that had the little packets as shown sitting in a big box.
