When I worked at a supermarket, I would occasionally get invited by coworkers to go to Applebees after the store closed. They would all get an appetizer or two and one of the cheap "margaritas". They never got more because they couldn't afford it. Not only was that depressing, it was always after 9pm on a Sunday night, so except for the bar, the place was mostly empty. It was always a soul-crushing experience for me.

I was on a trip and the pass was closed so I spent 3 hours at applebees getting drunk the appetizers were pretty good

It used to be boomers. Then they tried to change their schtick and started trying to market towards millennials.
So they started expanding their beer selection, playing loud music, and changed the decor.
The one near me started advertising that they had 30 beers on tap including all the local breweries.

This utterly failed to catch on with millennials and it turned boomers away at the same time, so they started going belly up.
My city used to have more than a dozen Applebees. Every single one of them closed.

Yeah I get it in my country there are franchises too, but the businesses that attempt that route have to mantain really high quality standards to retain their clientele.

People here naturally distrust big chains when it comes to food. I know at least two cases (one restaurant, one ice cream parlor) that being overwhelmed with customers 24/7 still refuse to expand for fear of losing their "small family business" cred.

That's admirable. Most people take the money and run.
But if you are beyond capacity, then you need to expand - even if that means just to a bigger location or a second location on the other side of town, not necessarily go chain.
