Getting married next year, and the old lady is putting together a wedding registry. As she was bugging me for ideas, I figured I might get into Chemex, since it only needs a good temp.-controlled kettle, a food scale, and a good grinder. Per Serious Eats, I was going to get the Baratza Virtuoso+ — which looks to be consistent and durable, with a lowest setting that's very fine. The missus said that it would be too expensive, since some of the guests are not very wealthy (though her aunts and uncles are loaded).

With this in mind, I was wondering if y'all had a manual burr grinder you'd recommend. All I am really looking for is consistency in the finer grinds. Ideally, the finest grind would be fine enough to also make Turkish coffee, but pourovers are the main focus. Portability (within reason) and effort exerted are not concerns at all, as it's going to live in the kitchen and I welcome a good sweat.

I think Chris baca has a tutorial. Again it's not difficult but you're gonna be standing over your chemex at least 5 mins every time you brew. You always start with a bloom, then typically pour in 50g increments, or divide your water into 3-4 pour stages at set time intervals. I mean you don't have to do all this but with pourover the advantage comes from learning technique to draw out flavors from the coffee, you start to learn what you like from certain coffees and how to accentuate that the best or else you might as well just buy a drip machine.

for now i buy pre-ground coffee as the grinder i want is out of stock. for the pot itself, decide on the cup size you want. i have the 4 cup version which is just for myself. ideally, throw away the first 3 coffees you make as they won't taste nice. use hot water for the moka pot and pre-heat your heat source (electric/gas). keep the lid up on the pot during the process. when the coffee starts to rise up, as it makes a hissing sound, put the bottom part of the pot under a cold tap for a few seconds to halt the extraction process. then pour the coffee into a cup and stir.

I put milk in it, usually UHT, I don't go through milk much so it works well and I find it's a little creamier than 'fresh'. Where I'd usually use fresh whole-milk I find UHT 2% does the trick.
