So I have a good amount of green Thai chili peppers I bought, and I want to make a hot sauce out of them. I've had them frozen because I don't know what I should do. Suggestions or better, sauce recipes?

Don't know about Thai green chillies, but I had a Mexican coworker back in the day made a damn fine habanero hot sauce. He would mix mangos in with some some habaneros, tomatoes, scallions, garlic, and some chillies in adobo. He'd cook that down then blend it with some vinegar and bottle it up. It only got better as it sat on the shelf.

I actually made Habanero Peach hot sauce Friday. I got the habaneros and peaches at the same store as the chili peppers.

I never though of pickling them. I just don't have ideas for them

3 INGREDIENTS
lots good fish sauce
lime juice to taste
shitton of chopped thai chilis

mix in mason jar, let sit for a day and then spoon sauce and peppers over whatever the fuck you want. Hot, slightly fruity, sour and salty.
