What is this on top of my coffee? Some people tell me it's just oils from the beans, and that some blends will have it and some won't. Is that true?

could be soap residue, but it's probably just coffee oil.

Depends on the processing of the bean - how its cleaned, roasted, stored, even brewed. Certain places/farms have oilier coffee as well.

It's like the oil floating on a broth - it might be unsightly, but ultimately it's just flavour and possibly some gastric distress.

like the other dude said, the beans were roasted too dark, especially a problem with full auto machines
you should stop roasting shortly after the first crack
