step 1: grab some butter bread or brioche (even more flavorful but sugar content can be more prone to burning), 2 even slices obviously

step 2: stack cheese 1 slice thick each layer as follows between your slices (you might use more than one slice however to cover the entire surface of the bread)

a. yellow american
b. choice of cheddar (sharp doesn't melt as well though) or muenster
c. yellow american

step 3: butter this bad boi exterior faces liberally - room temperature better will spread easier. You can also either premix some pepper in or apply before buttering (it'll stick to the bread more than if you apply after)

step 4: pop onto a preheated skillet on a low heat

fry for about a minute and a half on each side. If you want it a bit darker thats up to you, I typically do. But it will vary depending on your cooktop, just how much heat you select, pan etc. obviously.

As anon suggest, pickles are pretty good pairing - half sour or a high quality dill (not this sweetened crap you'll usually find on shelves get something like Nathans - check your delis coolers) is what I like. But for sure a nice cold mexican coke is the ideal drink pairing.

What does America mean by "sharp cheese"? Older/more ripe?

You don't know what a sharp flavor is? Think about it. It's probably exactly what you imagine. A sharp cheese is a cheese which expresses a flavor like that.

>You don't know what a sharp flavor is?

Of course I do, that isn't what I asked. Nvm, I looked it up and sharp cheddar is in fact aged longer. I should have known better than to ask you people anything. I blame my own laziness.

The best grilled cheese uses a mixture of cheeses. The most perfect combination I've found yet uses (real) American cheese, sharp cheddar, and fontina.

I'm an American who'd like to make a proper cheese toastie at home. Anyone have a good recipe?

>> No.12439438

first of all, don't use sliced cheese, that's for retards that can't cook and don't like melted cheese. cheese should be FRESHLY shredded.

both sides of your bread should be buttered.

you should use a blend of cheeses. what you choose is up to you but you need to have one cheese that melts very well, like monterey jack, and one for flavor, like an aged cheddar. my fave was a blend of monterey jack and kerrygold's reserve cheddar. comfy. but you can use any combo of cheeses if you just follow that rule.

medium heat, minimal flipping.

don't put extra shit in it, then it's a fucking melt not a grilled cheese. plus it just makes a mess and gets all soggy. if it's not broken, don't fix it.

low heat, lots of cheese, plenty of butter.
and I have to thank chef john for this one, cheese on the outside and let it get crispy.

They mean a cheese that literally says "sharp cheddar" on the pack rather than mild.
