First we marinate the skirt steak. It was frozen because it was on sale but will still taste good for what we are doing. Lots of Salt, pepper, olive oil, cilantro, and lime juice. Let sit long as you can.

Forgot and plenty of onion.

We will be cooking in cast iron because I just moved and dont have grill. Sear on very high heat till crispy and finish in oven. Add onions in pan to cook down if you want or leave them raw.

You can use any oil you like it's got olive oil on it but I cooked in some bacon grease from that morning for more flavor

Chopped up it ended up medium well after I finished in broil because i got busy watching One Punch Man. Add tomatoes chopped or Pico, Avacado, and onions from marinade.

Used lime I prefer more of that than lemon or orange.

If you cook it properly and cut small you dont need to tenderize.

Melt some cheese on chips then add more shredded on top. Sour cream, Jalapenos, and if you want green onion. Additional onion and lime juice is good too.
