Chicken fried steak from this diner in upstate New Hampshire

Everything about it was good. The atmosphere was this quiet little mountain town, they had a little train that went throughout the restaraunt showing you the specials, the coffee was black and strong and all the waitstaff was overweight friendly white women.

It was a simpler time in my life, and I’ll always cherish how the sausage gravy tasted with that good cut of steak. Everything was okay, god I miss it

Sounds delicious!

You know, FYI, your publix deli sells boars head porketta you can slice by the pound. It doesn't have the yummy texture of cracklin' pork rind of a homemade roasted one, but all the flavor is there in an Italian herb rub. I buy it or the public brand spanish roast pork, or the chimmichurri roast beef when I want to mock up a cuban style buttery garlic crust of a pressed sandwich from my press (line with foil). On certain days when it looks good, the fresh mojo pork is worth a buy as well.

2 things:

1) Real Vietnamnese Pho soup:
- Lime on the side to squeeze onto beef (NOT lemon)
- raw beef, sliced so fine that it is cooking just from being put into the soup.
- no mint
- savory dark broth
- thick rice noodles that are not soggy or too soft (al dente)
- Very little: Coriander
- Almost none: soybean sprouts
- none: Chillis/pepperoni
- spices
- Optional: some gambos (fat shrimp) or chicken strips (very soft after boiling with flavour and rather round in shape instead of flat slices like the beef. (This combination is often called "Pho Dac Biet)

I have tried multiple restaurants in my city who offer this, but there is only ONE store with a Vietnamnese cook who gets it right like this.
I always order there when I have achieved something or had a bad day.
If done right, it is one of the most delicious things ever.

2) blue/common mussels steamed in hot water and white whine spicy Italian style with fresh chopped parsley and baguette

You basically fry (frying pan) some garlic, (3) onions and finely sliced pepperoni (1) in olive olive until they start to get golden. Crank up heat, put a small bit of herb white wine in that will lose up all the golden broth parts from the frying before. Stir. Add some water and a boiullon cube.
Add a can of tomatoes (400 ml) and some fresh small cherry tomatoes, salt pepper and some of the chopped parsley.

Bring it to a VERY hot boil.
get some more white wine in, let some of it steam off, so that it doesn't taste of any alcohol.

Put in (prepared) mussels, put on lid instantly. Cold mussels will cool down the broth. The lid will allow the mussels to be steam boiled and for the pot to heat up again faster.

Mussels don't need to be covered in fluid. Only 1/2 needs to be covered. Steam does the rest.

Don't overcook them, wait for them to open. Stir like 2 or 4 times. Be sure the heat from the bottom has hit all mussels at least once to have a 0,0000001 % of any bad shit from the sea water to survive and make you sick.

Don't eat the mussels that havened opened.

Put bouught baguette in oven before starting to steam the mussels at 70-100 C to warm it up for eating.

The opened mussels will somehow collect the pieces of onion and tomato so that you will always get a bite of everything when you get a mussel out of her shell.

Sprinkle rest of freshly chopped parsley over bowl of steamed mussels.

Enjoy - It is delicious.

I think it depends on how far away you live from the ocean and how big the city is that you live in. Bigger cities will have more wares and better supply chain performance.

I live in Germany.

They are very easy to get. Actually I buy them from a discounter (LIDL), who offers a cooled package (not frozen!) with about 500 g of weight for about 3,98 € / 4,47 $. (pretty cheap compared to deliciousness and beef for example)

Cost adds up though with the baguette, white wine and onions. One bottle of white wine should be sufficient for doing the recipe twice. You could also just leave it away and replace it with more normal broth. Is totally fine as well.

The weight also contains the mussel shells and a bit of seawater obviously, but is sufficient for one person, especially with the broth and baguette. The meat is not that much, obviously, but definitely enough.
You can even reheat it on the next day or just save the broth for the next day to combine it with some sort of white bread or white rice.

Mussels aren't available throughout the year though.

In Germany, we have a saying that you should buy them in the months that end with "r".

> Oktober
> September
> November
> Dezember
> Januar
> Februar

Have fun, I hope you will like it!

The recipe is not that difficult once you have figured out how to clean and sort out the mussels. In comparison to baking, there is not a lot you can do wrong.

In terms of eating out I can't really say, but there is one home cooked dish that was my fav:
Basically I used to have fried chicken noodles as a kid. This was a pretty tasty dish, but there would be leftovers. The next day I would have pancakes (French kind aka crepes) and I would fill a pancake with the noodles and roll it up.
The cool thing about those noodles is that the flavours would get much more intense after being mixed together for 24 hours. The 24 hour noodles with the fresh pancakes just made for a fantastic combination.

Enjoy! Always nice to help out a Polishbro!
Remember to read proper instructions for how to prepare mussels first.

If they are open before cooking or have "lips" hanging out, thats totally okay for example. You have to knock them onto something and if they close, they are still alive. Closed mussels are generally usable, but not eatable if they stay closed after cooking. I would suggest putting them in a big bowl with cold water (add some salt) and let them stand around for 1 hour. They will mostly open up a bit and release potentially brackish sea water and dirt that could ruin the taste. Some cooks like to leave the sea water in for the taste, but I don't, because it can taste bad or cause food poisoning or contain dirt.

My fav sandwich is the amerimutt deluxe. It takes a fair amount of preparation, but it's worth it in the end.

It's best to catch your amerimutt live, rather than buying it in the shop. What I like to do is go down to the nearest tourist trap and see if I can spot one in the wild. You can usually identify them by their oversized appearance, their loud and confused attempts at communication, and their love of all things related to guns and Israel. The smaller ones can typically be strapped to the top of your car, the larger amerilard variety will need a suitably bigger mode of transportation - which may mean hiring a truck.

First, take your amerimutt and slay it in your backyard. Careful not to wake the neighbours - they'll want some too! Take only those parts you need for the amerimutt deluxe, the rest can be preserved for later. Fry your amerimutt with only a small amount of oil, then stick three slices of bread in the toaster to make it nice and crunchy. On the first slice put your fried amerimutt with some lettuce + tomato + mayo. Put the second slice on top. On the second slice put some bacon and cheese. I recommend American cheese to give it an authentic touch. What the hell, squirt some ketchup on there. Throw the third slice on top and garnish with peanut butter and jelly.

Voila. The amerimutt deluxe!

Wash it down with an ice cold beverage and smoke a cigarette, you've just eaten one of the world's foremost delicacies.
