My problem is that he sautes his onions and peppers AFTER he browns the beef. Just buy a fucking dutch oven and do the onions then add the beef. Draining the grease is fucking stupid anyway. Deglaze with beef stock. Also nothing wrong with canned tomato sauce as long as you add in some actual chopped tomatoes.

jesus christ someone actually thought this was a good recipe
the best I ever had involved fermented scotch bonnets and purple habs
sweat chillies, garlic, finely chopped carrot/celery, a lot of thyme and a little rosemary in lard. remove
colour minced flat iron/rump/short rib and a little kidney, hard in lard
chop onions, cook hard in lard in same pan
deglaze with a few bottles of stout; once booze is cooked off add some overripe passata
add all back as well as some adzukis that have had a good soak. if you have them, some sprigs/stalks of parsley, chervil, and coriander make a fine addition. cover with stock, bring to simmer and cook for about 4h
