You can absolutely fry them in a pan with oil, but deep frying them is much easier since you wouldn't have to flip them. But just make sure you have enough oil to come fully halfway up the sides, otherwise you'll end up with a little undercooked seam around them.

A deep pot will work just fine. Also consider using lard, all the really good Mexican restaurants I've been to use lard, it makes a big difference.
