VOTING ENDS ON MAY 10TH AT MIDNIGHT CEST

Welcome to the 2019 /ck/ Challenge!

The theme for each round is announced on the 1st Monday after the previous round's end with 2 weeks for submissions (except for this round cause some anons want to make some Easter Sunday shit so we're doing things early!). After that the voting/rating thread goes up for 3 days and everyone is welcome to vote on the submitted dishes.

Submit your dish with a timestamped picture of your creation (ideally with an available step-by-step process via an imgur gallery post or a photoshopped/GIMPed picture) with a unique totem visible in the picture (any type of object be it a dice, glassware, cloth that you'll show with your submissions for the rounds). If you would not like to submit scores then you are free to give feedback/criticism on the challengers dishes as you see fit (just don't fucking clog up the thread with autism please).

The voting will follow modified Iron Chef rules, a 20 point scale where 5 points each will go towards Presentation (how the dish looks on the plate, i.e. the plating), Originality, Appeal (how appetizing the dish looks to you) and fulfilling the Challenge Goals.

For this round of the /ck/ challenge the challenge theme was CHILI PEPPERS!

In this round I tasked the challengers to prepare a dish that exhibits the flavours and qualities of chili peppers! There were no restrictions to the type of dish that will be made other then it must be a dish exhibits the qualities of chili peppers to their fullest!

As this is the FINAL OPEN ROUND before we begin Round 4 in 2 weeks time, the number of competitors in this year's /ck/ challenge will be cut down to just 7 chefs so the 7 chefs with a dish submitted that had the highest round average will move onto the elimination rounds!

With that being said let's present the dishes for round 3!

I'll also be using the follow-up thread to get some feedback going into the next rounds as to what would make the voting process more enjoyable (aka should we go back to immediate voting?) and more suggestions to alter what I have set for the future round themes (outside of round 10 which will be the obvious one from previous years).

Appeal: 4/5, garnish doesn't really add much although I'd definitely eat it and be satisfied although some parts of the chicken from last thread pics looked a tad overcooked.

Like the variety of color and and textures; neatly wrapped but wished there was some sauce on the plate. Combining cocoa with spice was the most fun element but idk if it's really unique. Looks appealing; like the spatchcock, tortilla looks a tad thick to me & wish there was more salsa or another wet element to tie it together. Couple different uses of chilis and think the flavor would be there but ultimately supporting the chicken and maybe muddled by the cocoa

I think a chile relleno is kind of hard to plate but think could have been plated a bit nicer. It's a stuffed pepper so not very original but like the smoked mozz, aardvark batter, and pickled salsa. I think this would appeal more with some kind of wet/saucy element and something meaty. Chili stuffed into a chili with chili infused batter and pickled chili salsa and chili garnish; obv 5 here

Beautifully assembled tart; think some kinda sauce, jam, or relish on the plate would make the dish look even better. Definitely the most original submission this round; the only dessert submission for something easier to use savory. Overall flavors sound nice together and fun; iffy on the goat cheese & amount of mousse; think I would've liked some fresh pineapple on top. Unique and restrained use of chili; I do think the habanero would've gotten muddled if a variety of chilis was used but i also can't imagine the habanero standing out from being a background flavor without also being too spicy

I think the colors were adjusted in post in a way I don't find appealing but not docking points for that; char on the skewers looks nice, like the relish and crema but plating is a bit sloppy & wet. I like the asian flavors but it doesn't look like an asian skewer (imo), still not super unique. Savory, sweet, spicy; like the saucy elements; variety of textures and roasty vs fresh flavors. A bit more chili-centric than some competitors; not over the top but there are multiple uses & think the chili flavor would be present

Maybe it’s my ineptitude to imagine the flavors correctly, I just felt the other submissions offered more pepper flavors (tiki literally served a pepper with peppers, two were smothered in pepper sauce and served with pepper, maybe sake’s peppers would’ve been overpowered by his choice in other spices but he served some more slices in the final wrap) I think bell is closest in terms of my perception of pepper subtlety but I felt the non-pepper flavors in the tart were less assertive than in the Mac and cheese. Kinda wish I’d had docked half a point off bells theme score but ultimately it wouldn’t change your score or how I ranked everyone. Hope that kinda made sense.

It looks good, but I am not sure about your placement, your dish has two layers, but by making a mountain out of it what looks like breadcrumbs not are disorganized. Your application of sauce is also a bit crude, the sauce is not well emulsified so the continuous likes look uneven with dark and light spots, for sauces like these drops and other random placement techniques are more advisable

I’d never had lotus root salad, but when I googled it I was kind of surprised to find that all the pictures look pretty much like yours. You did go over and above by making your own head cheese – and I love Vietnamese cold cuts – but I wish there was a category for effort, because you always go above and beyond. Also, those shrimp seem like they probably weren’t very flavorful, as it seems like you added the aromatics to your poaching liquid at the same time you added the shrimp.

I’m not really into cakes and tarts and desserts in general, but I liked the combination of sweet, savory, and spicy in this – and it’s hard to argue with such a thorough vertical. My complaints are mostly just nitpicking: I don’t like garnishes you aren’t meant to eat, it’s a pretty tart but there isn’t really much presentation to speak of, and honestly, it’s probably way too spicy for me. You used habanero in two different unique ways.

It kind of seems like you just emptied your pantry of everything chili related and did multiple things all thrown together on a skewer, but like someone else said, I’m not sure how well all those different flavors mesh when layered on top of one another. It might work, but kind of just seems like overkill. I’m also not really a fan of skewers in general; the meat always seems to end up overcooked. I don’t know about the lighting in your presentation pic, but it looks like you plated it, didn’t like how it looked, wiped down the board with a washcloth and forgot to dry it before re-plating. I like what you were going for and there’s good colors there, but it just doesn’t look very good and that crema and cilantro on the side isn’t exactly great.

Alright well I guess the voting is done so I guess I'll announce the round winner and will have the collage done for the next thread (Round 4 will begin on Monday morning).

And in a mirror reflection of last round it was a close battle between two of the top performers in the open rounds, but like round 2 the winner is...BELL!

With an average score of 16.625, Bell narrowly beats nrrwmndd's 16.375 average to take a second straight round victory!

With this the open rounds have concluded and with this the elimination rounds will begin next week, but with only 7 chefs who braved through the Kit/ck/hen Stadium to gain a spot with their highest ranked open rounds dish.

And it accidentally exposed that people aren’t voting for what would actually be the best to eat but almost solely judging on stylistic bullshit. If you tried to serve that to a person in real life it would get thrown in the bin. I saw a show the other day where a three Michelin Star restaurant was serving raw prawn with fresh raspberries on top and it reminded me of the toast sandwich. There is a line somewhere out there that once crossed turns absurdity into fanfare for no discernible reason and the average person will mistake insanity with genius.

Regardless, the decider for who makes it into Round 4 was your single best average scoring dish. One of Tiki’s dishes averaged above a 14 while none of yours got a 14 or above so you’d still not get past the other two.
However, if Moose doesn’t show up to submit a round 4 dish I’ll try something so stay tuned.
